  2. There are a few things as comforting, soothing, and pleasant as a good baked potato. This small variation retains all those qualities, and whatever pretensions the added ingredients give are passed on to you in the form of highly pleasant dreams.

  4. Wrap a tea towel and press gently to soften 1 large baked potato.
  5. Cut a small hole in the side and scoop out the inside.
  6. Mix the potato with 1/2 cup sauteed diced mushrooms, 1 egg yolk, 1/4 cup sour cream, 1/4 cup grated Parmesan cheese until it is very fluffy and lumpless.
  7. Scoop it back into the potato shell, reheat in a hot oven for about 10 minutes, and serve with a little paprika on top.
