French Lentil And Couscous With Tomato Garlic And ...

Ingredients:

Directions:

  1. Crush the peppercorns with a motor and pestle
  2. In a deep fryer, place the garlic and the olive oil and cook until garlic is tender.
  3. Add the Pine nuts sauté for another 2 minutes add the peppercorns
  4. Add the basil and the tomatoes and simmer for 20 minutes remove and set aside.
  5. In the same pan, add the onions and sauté until translucent
  6. Add the vegetable broth and the lentils and simmer until lentils are tender.
  7. Add the Couscous and simmer until the liquid is absorbed
  8. Add the nutritional yeast and sea salt to taste
  9. In a large bowl, combine the tomato and basil mixture with the couscous.
  10. Serve into individual bowls and garnish with a sprig of tarragon
