Tomato And Procsciutto Frittata

Ingredients:

  • 1 tbsp water
  • 1/8 tsp salt
  • 5 large eggs
  • 1 slice of procsciutto ripped into strips
  • 1 tsp finnely chopped chives
  • 2 tbsp parmasian

Directions:

  1. Turn on broiler
  2. Sweat pepper and onions
  3. Wisk eggs, water, half of herbs, cheese, salt and pepper
  4. Add tomato
  5. Add to pan with peper and onions
  6. Saute till bottom sets
  7. Lay on strips of procsciutto
  8. Sprinkle on the rest of cheese
  9. Place under broiler for 4-5 minutes or until top becomes golden brown or delicious
  10. Remove from the oven and let set
  11. Cut into wedges to serve then sprinkle on rest of herbs
