Zesty Bean Side Dish

Ingredients:

  • 1-2 cloves garlic
  • 2 tbsp cooking oil
  • 1 16 oz can black beans (drain and rinse if you don'tsp like gas after dinner)
  • 1/2 lime

Directions:

  1. Sauté onion in cooking oil until translucent (use a large skillet)
  2. Add beans, stirring occasionally until heated all the way through
  3. Add garlic last, apparently if it is cooked too long it gets bitter but you want to give it enough time to let the flavor seep into the mix
  4. Squeeze lime over everything stir another minute and serve...
  5. Note: Like I said this can be served as a zesty mexican side dish or over your favorite rice with chicken. I cook boneless skinless chicken breasts on the side along with some 5 minute rice when I am in a real hurry and I squeeze the other half of the lime over the chicken while its cooking; if you are a good multi-tasker it will all be done abou the same time.
