Ingredients:

Directions:

  1. Cook spanish rice according to package directions.
  2. Saute the onion and garlic in oil in a large, oven-proof skillet.
  3. Add the spices, lime, beans, and tomatoes and saute until heated.
  4. Stir in the cooked rice. Add salt and pepper to taste.
  5. Sprinkle a layer of cheese on the top and place the skillet into the oven. Broil for 3-5 minutes until cheese is bubbly and beginning to brown.
