Sweet Potato Casserole

Ingredients:

  • 1 1/2 lbs sweet potatoes
  • 2 tbsp brown sugar
  • 1 tbsp dark rum
  • 1/3 cup milk
  • 1 tbsp brown sugar
  • 1 cup cut pecans
  • 1 tbsp soft butter
  • 2 tbsp flour

Directions:

  1. Boil potatoes till tender, cool and peel. Mash!
  2. Add brown sugar, melted butter milk and dark rum, Mix with electric beater or processor.
  3. Put in lightly buttered casserole.
  4. For topping, mix together soft butter, brown sugar, flour and cut pecans.
  5. Sprinkle over top of sweet potatoes.
  6. Leave until the next day.
  7. Bake at 350 degrees for 30 to 35 minutes. Very rich!
