Ingredients:

  • 3 cups sweet potatoes (i have used canned and fresh and they are both great)
  • 1 cup sugar
  • 1/3 cup melted butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup coconut
  • 1/3 cup flour
  • 1/3 cup melted butter

Directions:

  1. Preheat oven to 325 degrees. Mix potatoes that have been mashed, sugar, butter, eggs and vanilla together until well mixed. Pour into a 8X8 casserole dish. In the same bowl used for the filling mix all ingredients for the topping together. Spoon topping on the top of the potatoes and spead it out evenly. Bake uncovered for 20-30 minutes.
