Ingredients:

Directions:

  1. Slice all of the veggies into cubes.
  2. Toss with salt, pepper, maybe a little oregano and a pinch of sugar if the tomatoes are tart.
  3. Add vinegar and THEN olive oil, toss once more.
  4. Crumble and add the feta cheese. Can be served right away, or be kept in the fridge for up to 4/5 days.
  5. I think it tastes even better on day 2 and 3 once the vinegar and seasoning had a chance to really penetrate the veggies.
