Baked Potatoe Soup

Ingredients:

  • 2 large baking potatoes (1 lb)
  • 1 bunch fresh chives
  • 1/4 tsp dried chives
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 cups milk

Directions:

  1. Bake potatoes at 425 degrees for 40 to 60 minutes, until tender
  2. Cut in half lengthwise and scoop out pulp.
  3. In a large saucepan melt butter then add in 1/4 fresh chives finely chopped stir for about 1 minute then stir in flour and continue stirring until flour is well incorporated.
  4. Add dill, salt , pepper
  5. Add milk all at once.
  6. Cook and stir until thick and bubbly.
  7. Add potato pulp and 1/2 of shredded cheese, stir untl cheese melts.
  8. To serve garnish each serving with remaining cheese , finely chopped chives, crumbled bacon.
