The Best Creamed Eggs from the Good Housekeeping Cookbook

Ingredients:

  • 6 eggs
  • 3 tbsp butter
  • 1 tbsp minced onion
  • 3 tbsp flour
  • 1/2 tsp salt
  • speck pepper
  • 2 cups milk
  • cheese (optional)

Directions:

  1. Hard cook eggs. Then shell.
  2. In pan, melt butter, add onion. Simmer until tender. Remove from heat. Stir in flour, salt, pepper, Worcestershire.
  3. Slowly stir in milk. Stir until thickened. Add parsley & herbs. Cut eggs into slices, quarters, or halves. Fold into sauce. Heat.
  4. Serve on top of english muffins.
