Ingredients:

Directions:

  1. Drain off as much liquid as possible from potatoes, then toss with the onion, parsley and flour.
  2. Beat eggs with a little salt & pepper and then add to potato along with the melted butter and mix to combine.
  3. Pour into a well greased casserole dish and bake at 200.C for approx 10 minutes.
  4. Reduce heat to 180.C and cook for a further 30 mins or until golden & set.
