The Basic Crepe

Ingredients:

  • 3/4 cup. flour , sifted
  • 1/2 tsp. salt
  • 2 eggs
  • 2/3 cup. milk
  • 1/3 cup. water

Directions:

  1. In a large bowl, combine the flour, baking powder and salt. Mix well.
  2. Beat the eggs, milk and water in a small bowl until blended.
  3. Make a well in the center of the dry ingredients and add egg mixture.
  4. Whisk just until combined, ignoring any lumps.
  5. Heat a small skillet over medium heat.
  6. Spread a few drops of oil over the surface.
  7. Pour in 1/4 cup of the batter and quickly tilt skillet to spread the batter over the entire surface.
  8. Cook until brown on the bottom, turn and cook until brown on the other side.
  9. Stack crepes on a plate.
  10. If you wish to freeze the crepes for later use, layer a piece of waxed paper between each one, then slip the stack into a sealable plastic bag to freeze.
  11. * serving amount really varies. but if more is needed , just make another batch. : )
