Sweet Potato Quesadillas

Ingredients:

Directions:

  1. Boil sweet potato in water until potato is soft enough for a knife to pass through easily.
  2. When cooled, peel the skin.
  3. Add butter and brown sugar and mash together.
  4. Take 2 flour tortillas; on one side spread mashed sweet potato about 1/4-inch thick.
  5. On top of sweet potato, sprinkle 1 tablespoon black beans and 1 tablespoon corn.
  6. On the other tortilla, sprinkle shredded cheese to cover the entire tortilla.
  7. Put both tortillas on a skillet over medium heat.
  8. Once cheese melts, flip that side on top of the other tortilla.
  9. Cut into quarters and serve.
