Sweet Potato Casserole

Ingredients:

  • 4 medium sweet potatoes
  • 1 tbsp margarine
  • 1/4 cup orange rind
  • 1/4 tsp nutmeg

Directions:

  1. Cook whole sweet potatoes in boiling water for 25 to 30 minutes, or until tender.
  2. Peel and mash.
  3. Add remaining ingredients and mix thoroughly.
  4. Place in a lightly oiled 1 quart casserole dish.
  5. Bake uncovered in 375 degree oven for 25 minutes.
