Sweet Potato Casserole

Ingredients:

Directions:

  1. Cook potatoes in the shell.
  2. Boil for about 30 minutes.
  3. Remove from shell while hot by placing under cold, running water.
  4. Add 3 tablespoons margarine and mix well until creamy.
  5. Add egg and orange juice.
  6. Mix well.
  7. Add sugar, milk, salt and pepper.
  8. Put 1 tablespoon margarine in casserole (sides and bottom) Add mixture and sprinkle with nutmeg.
  9. Add margarine on the top.
  10. Bake at 350F for 30 minutes in 2 quart casserole.
  11. After casserole has cooked, remove from oven and top with marshmallows.
  12. Place in oven and let marshmallows lightly brown, remove immediately from oven.
