Ingredients:

Directions:

  1. Peel and cut sweet potatoes into 1 inch pieces.
  2. Place potatoes in medium saucepan.
  3. Add enough water to cover, bring to boil over medium high heat.
  4. Cook 10 to 15 minutes or until tender.
  5. Drain potatoes and place in large bowl,mash until smooth.
  6. Alternatively, use 4 cups cooked, mashed sweet potatoes.
  7. Add orange juice, egg, orange peel and nutmeg, mix well.
  8. Preheat oven to 375 degrees.
  9. Spray baking sheet with nonstick cooking spray.
  10. Spoon potato mixture into 10 mounds on prepared baking sheet.
  11. Sprinkle pecans on tops of mounds.
  12. Bake 30 minutes or until centres are hot.
