Apricot Mashed Sweet Potatoes

Ingredients:

Directions:

  1. Place the sweet potatoes in a large pot; add cold water to cover by about 1 inch.
  2. Cover and bring to a boil; reduce the heat and boil gently until the potatoes are tender, about 15 minutes.
  3. Drain and return the potatoes to the pot.
  4. Add the remaining ingredients, except preserves, and mash with a potato masher until smooth.
  5. Add apricot preserves, and stir potatoes well.
  6. Taste and adjust seasonings.
  7. If the potatoes seem dry, add a little more milk.
