Ingredients:

Directions:

  1. In a small pot, bring 3/4 cup water to a boil.
  2. Add quinoa, cover, and reduce heat to low.
  3. Cook until liquid is absorbed, 12 to 14 minutes; set aside.
  4. In a food processor, pulse carrot until finely chopped.
  5. Add cooked quinoa, scallions, garlic, black beans, breadcrumbs, egg, cumin, salt; pulse until combined but still slightly chunky.
  6. Form mixture into four patties.
  7. In a large nonstick skillet, heat oil over medium; cook burgers about 8 minutes per side.
