Penne With Roasted Asparagus and Balsamic Butter

Ingredients:

  • 1 lb asparagus
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp brown sugar
  • 1 lb penne
  • 1/4 lb butter , cut into pieces

Directions:

  1. Heat oven to 400.
  2. Snap the tough ends off the asparagus and discard them.
  3. Cut the spears into 1 inch pieces.
  4. Put the aspargus on a baking sheet and toss with the olive oil and 1/4 tsp.
  5. Each of the salt and pepper.
  6. Roast until tender, about 10 minutes.
  7. Meanwhile, put the vinegar in a small saucepan.
  8. Simmer until 3 T.
  9. Remain.
  10. Stir in the brown sugar and the remainig 1/4 tsp.
  11. Pepper.
  12. Remove from heat.
  13. Cook the penne in a large pot of boiling, salted water just until done, about 13 minutes.
  14. Drain the pasta and toss with the butter, vinegar, asparagus, Parmesan and the remaining 1 3/4 tsp.
  15. Salt.
  16. Serve with additional Parmesan.
