Peanut Butter Banana Honey Oat Muffins

Ingredients:

  • 1 cup flour
  • 1/8 cup wheat germ (optional)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1/3 cup honey
  • 1/4 cup vegetable oil
  • 1/2 cup peanut butter
  • 2 mashed ripe bananas (could also leave out if you do not like banana)
  • 1/8 tsp cinnamon
  • 1 tsp of brown sugar

Directions:

  1. Preheat oven to 400°F, and line cupcake pan with paper liners.
  2. In one bowl, combine the flour, oats, baking powder, salt, cinnamon, and wheat germ if using.
  3. In a second bowl, combine egg, honey, milk, vegetable oil, peanut butter, vanilla extract, and bananas.
  4. Add the second bowl to the first, stirring until just moistened.
  5. Distribute evenly among the cups.
  6. Sprinkle tops with brown sugar.
  7. Bake 20-25 minutes.
