Hot German Potato Salad

Ingredients:

  • 9 medium potatoes
  • 6 slices bacon
  • 3/4 cup chopped onion
  • 2 tbsp flour
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/2 tsp celery seed
  • 1 dash pepper
  • 3/4 cup water
  • 1/3 cup vinegar

Directions:

  1. Pare Potatoes.
  2. Boil in water for 30 - 35 minutes covered.
  3. Drain and set aside.
  4. Fry bacon in large pan until bacon is crisp.
  5. Drain and set aside.
  6. Cook onions in bacon drippings until onions turn golden brown.
  7. Blend in flour, sugar, salt, pepper and celery seed.
  8. Cook over low heat stirring until mixture is bubbly.
  9. Remove from heat and stir in water and vinegar.
  10. Heat to boiling, stirring constantly.
  11. Crumble bacon.
  12. Slice potatoes into thin slices.
  13. Stir bacon and potatoes into the mix.
  14. Heat through and serve.
