Hot German Potato Salad for 2

Ingredients:

  • 3 slices bacon
  • 1/3 cup chopped onion
  • 1 tbsp flour
  • 2 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp celery seed
  • 1 dash pepper
  • 1/3 cup water
  • 3 tbsp vinegar

Directions:

  1. Heat 1 inch of salted water (1/2 teaspoon salt to 1 cup water) to boiling.
  2. Add potatoes.
  3. Cover and heat to boiling; cook until tender, 20 to 25 minutes.
  4. Drain and set aside.
  5. In 8-inch skillet, fry bacon until crisp, remove and drain.
  6. In same skillet, cook and stir onion in bacon fat until tender.
  7. Stir in flour, sugar, salt, celery seed and pepper.
  8. Cook over low heat, stirring until mixture is bubbly.
  9. Remove from heat.
  10. Stir in water and vinegar.
  11. Heat to boiling, stirring constantly.
  12. Boil and stir 1 minute.
  13. Remove from heat.
  14. Crumble bacon into hot mixture, then slice warm potatoes into hot mixture.
  15. Cook until hot and bubbly, stirring lightly to coat potato slices.
