Hot German Potato Salad

Ingredients:

  • 9 medium potatoes
  • 6 slices bacon
  • 3/4 cup chopped onion
  • 2 tbsp flour
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/2 tsp celery salt
  • 1 dash pepper
  • 3/4 cup water
  • 1/3 cup vinegar

Directions:

  1. Cook potatoes in the skins and set aside.
  2. Fry bacon until crisp; remove from pan and place on paper towel to drain.
  3. Cook and stir onions in bacon drippings until golden brown.
  4. Blend in flour, sugar, salt, celery salt and pepper.
  5. Cook over low heat until mixture is bubbly.
  6. Remove from heat.
  7. Stir in water and vinegar.
  8. Heat to boiling; stirring constantly.
  9. Boil and stir 1 minute.
  10. Crumble bacon.
  11. Slice potatoes.
  12. Carefully stir bacon and potatoes into the hot mixture.
  13. Heat through, stirring lightly to coat potato slices.
