Hot German Potato Salad

Ingredients:

  • 9 medium potatoes
  • 9 slices bacon
  • 3/4 cup chopped onion
  • 2 tbsp flour
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/2 tsp celery seed
  • 1 dash pepper
  • 3/4 cup water
  • 1/3 cup vinegar

Directions:

  1. Pare and cook potatoes til tender 30-35 minutes Drain and set aside.
  2. In a large skillet, fry bacon til crisp. remove and drain.
  3. Cook and stir chopped onion in bacon drippings til tender and golden.
  4. Stir in flour, sugar, salt, celery seed and pepper.
  5. Cook on low heat, stirring til bubbly.
  6. Remove from heat.
  7. Add water and vinegar.
  8. Heat to boiling, stirring constantly.
  9. Boil and stir for one minute.
  10. Remove from heat.
  11. Crumble bacon and slice potatoes.
  12. Carefuly stir bacon and potatoes into hot mixture in skillet.
  13. Heat thoroughly, stirring lightly to coat potato slices.
