Ingredients:

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 2 quart baking dish.
  3. Arrange hash brown potatoes evenly in the bottom of the prepared dish.
  4. Sprinkle with the cheese, ham, and green onions.
  5. In a medium bowl, mix the eggs, evaporated milk, seasoning of choice and green chilies, if using them.
  6. Pour the egg mixture over the potato mixture in the dish.
  7. The dish may be covered and refrigerated at this point for several hours or overnight.
  8. Bake for 60 OR MORE...until the egg is done and set-in the preheated oven, or until a knife inserted in the center comes out clean.
  9. Let stand 5 minutes before serving and top with your selection of salsa although I love the Pace varieties. If anyone is interested in salsa’s that I’ve tried and other uses for them I can give you dozens of ideas.
  10. Once again, use this as a Springboard and feel free to make other additions to personalize this into your family’s favorite.
  11. I will be writing a cookbook and compiling family favorites with my own favorites. I have several hundred that were in a cookbook I created on Polly Motzko’s Favorites on Master Cook. I need to try and rescue my book back as my computer crashed and destroyed everything on it last year. My sister has a copy of my cookbook, thank goodness!
  12. Happy Cooking and feel free to share your recipes, tips and what not sometime.
  13. I’m in Southern CA and I created a Cooking Club on Group called:
  14. The Southern CA Cooking Club. If you’d like more info about that and how you can join or any other groups I’ve created, just drop me a line and before you know it we’ll be communicating and on to making some “delectable edibles” as I call them.
