Farmers Casserole Santa Fe Style

I added some things and made a few substitutions and ended up with a version that I think more flavorful and hopefully memorable in your family. Read more . The great thing about this dish is you can make this up ahead of time and then bake it the next morning for a great breakfast or brunch entrée. I’m making this for tomorrow to surprise my parents. I live next door to them & my mom is 77 and dad is 81 now. After all it is Valentine’s Day and who better to say Happy Valentine’s Day to the people that brought you into the world. Yummy.
Ingredients:
3 cups frozen hash brown potatoes or o’brian potatoes-like i’m using here
3/4 cup shredded cheddar cheese
1 cup diced, cooked ham or sausage or other meat of your choice
1/4 cup chopped onions
4 eggs, beaten or 1 cup of egg substitute which is what i use and it works great
1 (12 fluid ounce) can evaporated milk-i’m using the regular kind but you can use lower fat versions if you like.
1/4 teaspoon ground black pepper
1/8 teaspoon salt
or
in place of the black pepper and the salt add about 1/2 teaspoon of emerille la gasse’s
original essence-i found mine at sam’s club in a massive container and it was the same price as the smaller ones
if you like a more “snappy” flavor to your egg dishes which i like add
1 small can of ortega mild green chilies, diced
top with: pace salsa or any other salsa you happen to like. another good one is trader joe’s garlic salsagreat flavor and one of dozens they make
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease a 2 quart baking dish.
3. Arrange hash brown potatoes evenly in the bottom of the prepared dish.
4. Sprinkle with the cheese, ham, and green onions.
5. In a medium bowl, mix the eggs, evaporated milk, seasoning of choice and green chilies, if using them.
6. Pour the egg mixture over the potato mixture in the dish.
7. The dish may be covered and refrigerated at this point for several hours or overnight.
8. Bake for 60 OR MORE...until the egg is done and set-in the preheated oven, or until a knife inserted in the center comes out clean.
9. Let stand 5 minutes before serving and top with your selection of salsa although I love the Pace varieties. If anyone is interested in salsa’s that I’ve tried and other uses for them I can give you dozens of ideas.
10. Once again, use this as a Springboard and feel free to make other additions to personalize this into your family’s favorite.
