Easy New England Clam Chowder

Ingredients:

  • 3 slices bacon, diced
  • 1/4 cup chopped onion
  • 1 (8 oz) bottle clam juice
  • 2 (6 1/2 oz) cans minced clams
  • 2 cups heavy cream

Directions:

  1. In a 3 quart saucepan, brown bacon over medium heat (do not drain drippings).
  2. Add potato and onion and saute for about 7 minutes.
  3. Drain the minced clams and reserve the liquid.
  4. Add clam juice and reserved clam liquid to mixture in saucepan.
  5. Cover and simmer 15 minutes or until potato is tender.
  6. Stir in cream and clams and bring to a slow simmer.
  7. DO NOT BOIL.
  8. Serve with crackers.
