  1. Pre heat the oven at gas mark 4. put the honey water and margarine into a small saucepan and bring to the boil slowly, stirring constantly. Take off the heat and add the bicarbonate of soda and mix well.
  2. In a mixing bowl combine the flour, desicated coconut, rolled oats and molasses, Pour in the honey mixture and stir and mix ingredients well.
  3. Grease 2 large baking tins and drop the mixture onto them in rounded teaspoons, allowing room for them to spread. Bake for 12 - 15 minutes. Allow the cookies to cool slightly before removing them from trays. Store in an airtight tin as soon as they are cold.
