Ingredients:

  • 1 1/2 lbs ground beef
  • 1/3 cup oil
  • 1 cup cornmeal
  • 1 (8 3/4 oz) can corn
  • 2 eggs
  • 1 tbsp chili powder

Directions:

  1. Spray crock pot with cooking spray. Brown beef on stove top, drain and set aside.
  2. Saute onion in oil. Puree tomatoes in blender. When onions are slightly brown, add pureed tomatoes.
  3. Stirring well, add corn meal very slowly. Stir constantly to prevent lumping.
  4. Add meat and corn.
  5. Beat eggs lightly and add along with spices.
  6. Pour into crock pot and cook on low 6-8 hours.
