Chicken, Tomato, Bean Crock Pot Soup

Ingredients:

  • 12 oz chicken
  • 1 clove garlic
  • 1 1/2 tsp. oil
  • 28 oz broth , beef
  • 1 cup salsa
  • 1 tbsp cumin

Directions:

  1. Cook, debone, and shred chicken
  2. Add minced garlic to oil in slow cooker. Saute.
  3. Combine all ingredients. cover. Cook on Low 8-10 hours.
  4. May ladle soup over cube of Moneterey Jack Cheese; garnish with fat-free sour cream and tortilla chips
