Carmelized Sweet Potato Medallions

Ingredients:

  • 1/2 tsp salt (to taste)
  • 1/2 tsp pepper (to taste)

Directions:

  1. Cut sweet potatoes into 1/2-inch rounds.
  2. Add grapeseed oil, salt and pepper, and stir to coat.
  3. Place medalions on a parchment paper lined cookie sheet and cover with foil.
  4. Start in a cold oven because the bottom heat will caramelize the sweet potatoes and set to 400 ° F
  5. Cook for 30 minutes.
  6. Turn medallions over removing the foil.
  7. Bake another 15 minutes until tops are very brown.
  8. ENJOY!
