Cajun Sweet Potatoes

Ingredients:

  • 2 tbsp olive oil
  • 3 tbsp brown sugar
  • 1 tsp cajun seasoning
  • 1/2 tsp salt
  • 1/8 to 1/4 tsp cayenne pepper

Directions:

  1. In a large bowl, toss the sweet potatoes and oil. Arrange potatoes in a single layer in two 15-in. x 10-in. x 1-in. baking pans coated with cooking spray. Bake, uncovered, at 450° for 20 minutes.
  2. Combine the brown sugar, Cajun seasoning, salt and cayenne; sprinkle over potatoes. Bake 5-6 minutes longer or until tender. Yield: 6 servings.
