Banana Chip Muffins

Ingredients:

  • 1 egg
  • 1/2 cup. veggie oil
  • 3/4 cup. sugar
  • 2 cup. flour
  • 1/2 cup. oats
  • 1/2 tsp salt

Directions:

  1. Beat egg, oil and sugar until smooth
  2. Stir in bananas
  3. Combine dry ingredients and stir into banana mixture just until moistened
  4. Stir in chocolate chips
  5. Fill greased muffin cups 3/4 full
  6. Bake at 325* for 25 minutes for 6 jumbo muffins
  7. Bake at 375* for 18-20 minutes for 12 small muffins
