  1. PREPARE THIS JUST BEFORE SERVING FOR BEST RESULTS! Cut the mango into 'slivered' pieces to mimic the shape of your shredded cabbage. Meanwhile, stir sugar and vinegar in small heat proof measuring cup and microwave until sugar dissolves (try 30 sec and stir; repeat in 10 sec increments until sugar is dissolved into the vinegar.)
  2. Place mangoes, jalapeño, cabbage, cilantro, green onions, bell pepper and carrots in medium bowl. Pour cooled vinegar dressing mixture over and toss to coat. Season with salt and pepper.
  3. Let the slaw sit and marinate while grilling or preparing fish or chicken.
