Not your 'ordinary' slaw. Asian inspired ingredients and a light rice vinegar dressing make for a sweet and spicy side dish. This goes fabulous with fish, grilled pork tenderloin and glazed chicken. Read more and I believe she obtained orig. recipe from Gourmet Magazine. ) I've made a few changes to it like adding shredded carrots and red bell pepper cut in matchsticks. The red pepper goes GREAT with the mango sweetness.
Ingredients:
2 small mangoes or 1 large one, cut into 'slivered' pieces (see instructions)
3 tbsp sugar
3 tbsp seasoned rice vinegar
1-2 jalapeƱos, cut into very thin slivers
2 tbsp chopped cilantro
10 - 16 ounces of shredded cabbage mix (pre-bagged works perfectly)
1/2 red bell pepper, cut into slivered matchsticks
1 carrot, cut into slivered matchsticks
Directions:
1. PREPARE THIS JUST BEFORE SERVING FOR BEST RESULTS! Cut the mango into 'slivered' pieces to mimic the shape of your shredded cabbage. Meanwhile, stir sugar and vinegar in small heat proof measuring cup and microwave until sugar dissolves (try 30 sec and stir; repeat in 10 sec increments until sugar is dissolved into the vinegar.)
2. Place mangoes, jalapeƱo, cabbage, cilantro, green onions, bell pepper and carrots in medium bowl. Pour cooled vinegar dressing mixture over and toss to coat. Season with salt and pepper.
3. Let the slaw sit and marinate while grilling or preparing fish or chicken.
