Zingy Zangy Potatoe Salad

Ingredients:

  • 1 kg or 2.2lbs of potatoes
  • 2tblspns vegtable stock powder( i use vegeta)
  • 6 good splashes of red wine vinegar
  • 1 large onion (diced very small)

Directions:

  1. Peel dirty potatoes or wash clean potatoes and cut into bite size pieces
  2. Place in a pot with water and bring to the boil till the potatoes are nearly cooked
  3. Drain and allow to nearly cool
  4. Add potatoes to a large mixing bowl
  5. Then add potatoes then the olive oil
  6. Then diced onions and black pepper
  7. Then add the vegeta or powdered stock
  8. Now add the redwine vinegar
  9. Toss all ingredients together gently
  10. When all mixed cover with cling wrap and refridgerate.
  11. When completly cooled serve.
  12. *** can be made the day before for the best results ****
  13. Always tastes better the longer it is cooled (enjoy)
