Sweet Potato Souffle

Ingredients:

  • 3 eggs
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda

Directions:

  1. Peel and cube potatoes.
  2. Boil until cooked through and soft.
  3. Mash very well.
  4. While potatoes are warm but not hot, add in rest of the ingredients.
  5. Mix well and put in baking pan.
  6. Cook on approximately 350 for 1 hour.
