Snow Crab Filled Cucumber Rolls

Ingredients:

Directions:

  1. Cut the ends off the cucumber.
  2. Cut the cucumber into three pieces.
  3. Use a knife to core the cucumber and remove the seeds.
  4. Combine the crab, mayonnaise, onion and Old Bay.
  5. If you are using the optional sugar and Tabasco, add them also.
  6. Taste test for flavor and add salt if needed. (Old Bay contains salt, so don't overdo it!).
  7. Stuff the three cucumber pieces with the crab mixture.
  8. Wrap tightly in plastic wrap and chill for 2 hours.
  9. Slice into 1/2 thick slices.
