Simplified Banana Oat Pancakes

Ingredients:

  • 1 1/3 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp nutmeg
  • 1 egg
  • 1 1/3 cups milk
  • 2 tbsp canola oil

Directions:

  1. In a large bowl, combine the flour, oats, sugar, baking powder, cinnamon and nutmeg.
  2. Combine the egg, milk, banana, and oil in a separate bowl.
  3. Stir egg mixture into dry ingredients until just moistened.
  4. Pour batter by 1/4 cupfuls onto a greased hot griddle.
  5. Turn when bubbles form on top and cook until second side is golden brown.
  6. Serve with your favorite topping or syrup.
