Simple Baked Oatmeal (Lower Fat)

Ingredients:

  • 2/3-1 cup brown sugar (use the lesser amount if you are adding choc. chips)
  • 1/3 cup oil
  • 1 tsp vanilla
  • 1/2 cup rice milk or 1/2 cup milk
  • 1/2 cup water
  • 3 cups rolled oats
  • 1/4 cup oat bran
  • 1/2 tsp salt
  • 1/2-1 tsp cinnamon

Directions:

  1. Preheat oven to 350°. In a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.
  2. In a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.
  3. Add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.
  4. Pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges.
