Cinnamon Banana Bread

Ingredients:

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 cups flour
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Preheat oven to 350°F (or 325F for dark or non stick pans).
  2. Grease and flour a 9x5-inch loaf pan or 12 muffin cups.
  3. Beat egg.
  4. Add sugar, oil, bananas and yogurt to beaten egg and beat with electric mixer until well combined.
  5. In a separate bowl, mix together dry ingredients.
  6. Add dry ingredients to yogurt-banana mixture until combined.
  7. Pour into pan and bake 60 minutes.
  8. Let stand in pan five minutes and then remove and cool completely on a wire rack.
