Ingredients:

  • 2 large eggs
  • 2/3 cup sugar
  • 1/4 cup water
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp clove
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger

Directions:

  1. Preheat the oven to 350 degrees.
  2. Mix together the eggs, pumpkin, sugar, applesauce, and water.
  3. In a separate bowl mix together the flours, baking soda, baking powder, salt, cinnamon, cloves, nutmeg, and ginger.
  4. Stir the dry ingredients into the wet just until mixed.
  5. Spoon into greased or paper-lined muffin pan.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
