Simple Baked Oatmeal (Lower Fat)

Recipe from a friend that I tweaked for our needs. If you don't have the oat bran or flax, just use another 1/2 C oats.
Ingredients:
2/3-1 cup brown sugar (use the lesser amount if you are adding choc. chips)
1/3 cup oil
1/3 cup unsweetened applesauce
2 eggs, beaten or 1/2 cup egg beaters egg substitute
1 teaspoon vanilla
1/2 cup rice milk or 1/2 cup milk
1/2 cup water
3 cups rolled oats
1/4 cup oat bran
1/4 cup ground flax seeds
1 tablespoon baking powder
1/2 teaspoon salt
1/2-1 teaspoon cinnamon
1/2 cup chocolate chips (optional) or 1/2 cup dried fruit (optional)
Directions:
1. Preheat oven to 350°. In a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.
2. In a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.
3. Add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.
4. Pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges.
