Ingredients:

Directions:

  1. Melt butter in a pan and gently fry vegetables for 5 minutes.
  2. Allow to cool.
  3. Beat together milk and egg.
  4. In a large bowl stir together cheese, flour, salt and vegetables.
  5. Stir in milk mixture until just combined.
  6. Pour into 12 buttered or lined muffin cups.
  7. Combine extra cheese and sprinkle over muffin tops.
  8. Bake in 400° / 200°C oven for 20 minutes.
  9. Keep an eye on them nearing the end as you do not want the cheese to burn.
  10. Serving them warm is the way I like them but at room temperature is fine.
  11. Makes 12 medium, 6 large or 24 mini
