Salsa Black Bean Crock Pot Chicken

Ingredients:

  • 1 1/2 lbs chicken
  • 16 oz. salsa
  • 16 oz. black beans

Directions:

  1. Pour about 1/2 c salsa on bottom of crockpot.
  2. Place four frozen chicken breasts into crockpot.
  3. Mix remaining salsa and beans, pour on top.
  4. Cover and cook 8-10 hours, shredding chicken when cooked.
  5. Serve over brown rice, or in a whole wheat tortilla with cheese, scallions, sour cream, or use as a topping for a nacho bar.
