Ingredients:

Directions:

  1. Cook rice ca 10 min in salted water, drain and mix with saffron and 2 beaten eggs, set aside.
  2. Saute onion and garlic in 4 tbs olive oil on low heat for 10 min till soft, add ground meat and cook/stirr till browned, pour over with the whine.
  3. Mix tomato paste in 1 tbs water and add to meat, cook 30 min on lowest setting (pan covered), taste with salt and pepper, if necesary add a little water , add mushrooms and cook 15 min more.
  4. Mix motsarella, parmesan and green peas.
  5. Devide rice in two parts, one part mix with meat mixture and the other with cheese/ pea mixture.
  6. Let cool down and then form patties, cover with flour, then put in beaten egg and cover with bread crumbs.
  7. Cook in deep fryer 4 min and drain from oil, put in an oven tray and bake for 5 min on 200 C.
  8. Serve hot, goes nice with a rose C abernet Sauvignon.
