Pineapple Cornmeal Upside Down Cake

Ingredients:

Directions:

  1. 28 cm springform pan, buttered
  2. Cut pared pineapple into rings
  3. Place in prepared pan
  4. Cream the butter and sugar
  5. Blend in the eggs
  6. Combine the cornmeals
  7. Add cornmeal alternately with the buttermilk
  8. Place batter in the pan over the pineapple
  9. Bake 180C ( 350F ) about 30 to 40 minutes until tested done.
  10. This may be served as is or inverted upside down.
  11. Serve warm with some whipped cream or ice cream
