Pineapple Cornmeal Upside Down Cake |

Translated form a German recipe group, this is a sweet cornmeal type of cake which may be served upright or upside down! best served warm with ice cream or whipped cream if desired Ingredients:
200 g butter |
200 g whole cane sugar ( found in natural foods stores ) |
3 eggs |
100 g , yellow cornmeal |
100 g , white cornmeal |
1 tsp dash of salt |
1/2 of a ripe pineaple, cut into rings |
50 ml buttermilk |
2 tsp baking powder |
Directions:
1. 28 cm springform pan, buttered 2. Cut pared pineapple into rings 3. Place in prepared pan 4. Cream the butter and sugar 5. Blend in the eggs 6. Combine the cornmeals 7. Add cornmeal alternately with the buttermilk 8. Place batter in the pan over the pineapple 9. Bake 180C ( 350F ) about 30 to 40 minutes until tested done. 10. This may be served as is or inverted upside down. 11. Serve warm with some whipped cream or ice cream |
