Cinnamon & Yogurt Muffins

Ingredients:

  • 3/4 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 cups flour
  • 1/2 tsp baking soda
  • 2 tbsp sugar
  • 1 tsp cinnamon

Directions:

  1. Mix together butter (softened), sugar, eggs and vanilla.
  2. Add yogurt; blend.
  3. Add dry ingredients and blend until all flour disappears.
  4. Use paper muffin bake cups or grease cups of muffin pan.
  5. Half fill the cups with batter.
  6. Sprinkle half of cinnamon mixture over batter.
  7. Then fill each cup with remaining batter and top with remaining cinnamon mixture.
  8. Bake at 200 degrees C for about 20 minutes or until golden brown on top.
  9. Makes 12 muffins.
  10. OPTIONAL mix chopped pear in with the cinnamon mix. Yum.
