Ingredients:

  1. Does not include chill time
  2. In a food processor, combine the garlic, vinegar, extra-virgin
  3. Olive oil, olive juice, lemon juice, red chili flakes, pepper and
  4. All vegetables up to the red onion.
  5. Pulse until well chopped but not pureed.
  6. Transfer to a bowl, cover with plastic wrap, place into
  7. Refrigerator and let marinate for 2 to 4 hours.
  8. Add orzo to marinated vegetables, toss, then add feta and toss
  9. Again.
  10. Serve in lettuce cups and top with tomatoes.
